Chef Frank's Note: I remember being at my grandmother's house on any Sunday and smelling the aroma from her awesome cooking. Grandmas chicken that she pan fried, then placed in a slow oven. She always had scalloped corn, mashed potatoes and gravy ( made from the chicken pan), Rolls, relish tray, and three layer jello with cream cheese in the middle for dessert. I love to create similar memories for my family. I thank my grandmother for taking the time to show me some of her methods.

Quick Easy Grandma's Chicken Recipe is a Favorite for Sunday Dinners. Grandma's Chicken is rolled in flour, fried, then in the oven for about an hour. Grandma's Chicken is served with Mashed Potatoes and Gravy.

Grandma's Chicken   serves 4
1 chicken, cut in 1/8s
1 c flour
5 tbsp butter
1 tsp season salt
1 tsp garlic (granulated or chopped)
1 tsp pepper

Place butter in skillet and melt on medium heat. Place spices in flour, mix, then roll chicken in flour mixture and place in skillet. Brown on both sides, turning with tongs. After chicken is browned, place in 9"x13" glass baking dish and place uncovered in pre-heated oven at 325* for 45 minutes to one hour. Serve with mashed potatoes and gravy.

Gravy recipe:
Remainder of flour above
2 tsp chicken base
2 c water
Leaving skillet on medium heat, add remainder of flour to drippings until flour has incorporated . Add 2 tsp chicken base and 2 c water. Mix with wisk while Remove from heat and serve.simmering, removing all lumps.

Note: Try
scalloped corn or squash, and a nice  green salad. Comfort food.
