Quick Easy Roasted Red Potatoes Recipe With Fresh Summer Squash, Onion, Carrots and Rosemary, Roasted
with Olive Oil and Spices. Great for The Fall Season.
Roasted Red Potatoes Quick and Easy with Vegetables serves 6-8 2 lbs red potatoes, rinsed, cut in 1/2 3 ribs celery, rinsed,
angle cut, chunky 1 onion , peeled, 1/4'd 4 carrots, peeled cut in chunks 1 summer squash, cut chunky 1 zucchini squash, cut chunky 2 0z. olive oil 1 tsp garlic, chopped salt and pepper to taste 1/2 tsp
rosemary, ground or whole if fresh
Place all ingredients in roaster pan and mix up. Place uncovered in preheated
oven at 350*, mixing around every 15 minutes. Roast for 1 1/2 hours or until tender. Serve as a side for any roast or
entree.
