Chicken Almondine Flambe’
Chicken Almondine Flambe’ is a Quick Recipe that is Elegant and literally on Fire! Use Chicken, Madeira Wine, Fresh Mushrooms, Onions, and Almonds to Create Chicken Almondine Flambe’.
Chicken Almondine Flambe’ Ingredients
serves 4
- 4 chicken breasts, cut in 1″ cubes or strips
- 1 c. slice fresh mushrooms
- 1/2 onion diced
- 1/4 c. sliced almonds
- 3 oz. maitre d’ butter
- 1 c. madeira wine
- 2 c. Flour
- 1 tsp. season salt
- 1/2 c. chopped fresh chives
Directions
Pre-heat oven to 400℉. Place almonds on sheetpan and brown in oven for 2-4 minutes, or until lightly browned. Remove from oven and set aside.
- In a large bowl, place flour and season salt and mix together.
- Take chicken and roll in flour.
- On stove using a large sautee pan, place butter and melt.
- Once butter is melted take chicken chunks from flour and place in pan evenly.
- Put in mushrooms, onions, chives and almonds.
- Let chicken brown in pan and turn with tongs so both sides are brown.
- Once chicken is browned, vegetables should be cooked enough also.
- Turn up heat on stove and add 1/2 of the madeira wine and light with stick lighter.
- You will get a nice blue flame. When flame goes out add the rest of the wine and turn down stove to simmer for a few minutes.
- Serve over wild rice.
Note: This is a good recipe to wow your friends with and it is quite easy to do. You may also substitute frog legs for chicken in this recipe.
