Vegetarian Chili Recipe
Vegetarian Mexican Chili a Quick Recipe for Lunch or Dinner. Vegetarian Mexican Chili with Corn Muffins, Crackers, and A Green Leafy Salad or Sandwich. A True Comfort Food Soup.
Vegetarian Chili Ingredients
- 2 cans chili beans
- 1 onion, chopped
- 1 green pepper, chopped or diced
- 2 ribs celery, chopped
- 2 tsp garlic, chopped or granulated
- 2 tbsp ground cumin
- 1 tbsp chili powder
- 2 qts tomato juice
- 4-6 oz. refried beans(canned are fine)
- 1/4 tsp white pepper
Directions
In large saute pan, lightly saute vegetables until tender. In large pot place all ingredients except refried beans( these are for thickening lastly). Slowly bring to a boil, stirring often. Let simmer for 1 1/2 hour, stir often. After chili is fully cooked you may want to add refried beans to thicken, its optional. Serve with crackers and shredded cheese if you please.
Note: You can use different beans like lima, white, brown, black, northern, etc. Serve with any side Salad, and Quick Bread.
