Creamy Scalloped Potatoes

- 3# red potatoes, sliced 1/4β³
- 1/2 onion, diced
- 3 ribs celery, diced small
- 3 c milk
- 1 c roux
- 1 tsp chicken base
- 1 tsp Chef Frankβs Seasoning
- 2 oz. butter
Creamy Scalloped Potatoes Directions
Boil potatoes in medium size pot for about 20 minutes. While potatoes are cooking, sautee onions and celery in butter, (adding slights amounts of water when vegetables start running dry). Cook until tender. Then start heating milk for cream sauce, adding seasonings. Stir almost continuous as milk heats, slowly add roux to desired thickness (quite thick). When potatoes are cooked, drain water, then put sauteed vegetables in pot. Pour cream sauce over potatoes and mix. Put in casserole dish and bake at 350β for 1 hour. Serve.
Note: Goes well with baked ham or our special Quick Easy Stuffed Pork Loin Recipe. Apple sauce is a must for this meal as well as a green salad.
