Homemade banana muffins, like the bread recipe, is foolproof and only takes 10 (ten) minutes to prepare. Serve while still warm and enjoy with your favorite beverage.

Banana Muffins


2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla
2 eggs
3 bananas
1/4 c butter, melted
1 c sugar
1/2 c milk

In mixing bowl combine flour, b. soda, b. powder, salt. Whisk together, set aside. In large mixing bowl put bananas in and smash up. Then add eggs, sugar, vanilla, milk, butter, wisk well. Add flour to wet ingredients and fold together only to wet flour. Don't over mix. Place spoonful of batter in papered muffin tins 3/4 full. Bake in preheated oven at 400* for about 16 minutes. Makes about 16 muffins.
