Everyone loves apple bread made from Michigan apples for breakfast. Apple
muffins too, and company will love it. Add raisins or dried cherries in the mix if you wish.

Bread
2 cups flour
1/2 tsp baking
powder
1/2 tsp baking soda
1 tsp vanilla ext.
1/2 tsp salt
1/4 c milk
1/2 c sugar
1/2 c brown
sugar
1 tsp cinnamon
1/2 c vegetable oil
2 eggs
4 Michigan apples, tart, peeled, diced, (canned can be
used, packed in water) about 3 cups (this can also be form Michigan Apples).
In medium size mixing bowl combine
flour, baking soda, baking powder, salt, mix together , set aside. In large mixing bowl, combine eggs, sugars, cinnamon, oil,
vanilla, and milk. Mix together with a wire wisk or you can use electric mixer. Mix well then add apples, finish stirring
by hand. Combine wet ingredients with dry and fold into a batter, don't overmix. When flour is incorporated
into batter, pour into greased bread pan. Bake pre-heated oven 350* for 1 hour. Test with toothpick. Put on wire rack to cool.
Enjoy warm!
Note If using convection oven remember to lower temperature by 25 degrees.
Note: you can add raisins or dried cherries, nuts of your choice like walnuts or pecans are great to add too. Add these
items when you add the apples. Also you can put this recipe in muffin tins for a breakfast treat!
For
baking muffins, bake at 400* for about 14-16 minutes, test with toothpick.
