Quick Easy Red Potato Salad Recipe with Fresh Boiled Eggs, Red Potatoes, Celery, Onion, and
a Mustard Mayo Sauce with Spices. Red Potato Salad makes a Great
Picnic Better.
Potato Salad
5 lbs red potatoes, cooked 15-20
min., chunked (do not peel)
5 eggs, boiled 7 minutes, peeled, sliced
1/2 onion, diced
1/2 green pepper,
diced
1/2 cucumber diced (optional)
1 c salad dressing
2 tbsp mustard
1/2 tsp white pepper
1 tsp
salt
1 tbsp sugar
1/2 tsp paprika
In large mixing bowl put all ingredients except potatoes. Mix well.
Add potatoes, mix well. Refridgerate. Serve
Note: You can use any potatoes like russets, U.S.
No. 1's, red, white, yellow, etc. I leave the skins on red potatoes only.
