Mango Sweet and Sour Chicken Arbutus serves 5
225 boneless skinless chicken breasts
20 mangos, peeled, chopped fine chunks in
processor
1 gallon oriental sweet and sour sauce (Duck Sauce can be used too)
2 oz. melted butter
Lay chicken breasts on Sprayed non stick sheet pans. Lightly brush with butter, and place in 350* pre-heated
convection oven for 15 minutes. Remove and cut chicken ( it won't be fully cooked yet) in 2-3 slices per breast and
place back on baking sheet. Mix mango with sweet and sour sauce and pour liberally over chicken breasts. Several options to
choose from when finishing chicken:
* Place back in oven top rack of oven for 15 more minutes.
* Under the broiler until lightly brown and chicken is fully cooked.
* On the barbeque grill.
Note: Serve with any rice or pasta and a nice green salad.
