Vegetarian Mexican Chili


2 cans chili beans
1 onion, chopped
1 green pepper, chopped or diced
2 ribs celery, chopped
2 tsp garlic, chopped or granulated
2 tbsp ground
cumin
1 tbsp chili powder
2 qts tomato juice
4-6 oz. refried beans(canned are fine)
1/4 tsp white pepper

 In large sautee pan, lightly sautee vegetables until tender. In large pot place all ingredients except refried beans( these are for thickening lastly). Slowly bring to a boil, stirring often. Let simmer for 1 1/2 hour, stir often. After chili is fully cooked you may want to add rerfried beans to thicken, its optional. Serve with crackers and shredded cheese if you please.

Note:
You can use different beans like lima, white, brown, black, northern, etc. Serve with any side Salad, and Quick Bread.
