Meatloaf for 200

50# ground beef (19/79)
5# diced onions
3# diced celery
50 eggs
3 loaves bread or 3#( or any buns or leftover breads)
3 tbsp beef base
4 c ketchup
1/4 c granulated or chopped garlic
1 tbsp white pepper
2 qts water

In 60 qt mixer place all ingredients (except ground beef), mix well on speed #1 (low) until ingredients are blended together, then add ground beef and mix until incorporated. Divide meatloaf mixture evenly between 7- 2" hotel pans. Cover with plastic wrap then press down with hands to get air out. Lift off plastic then lay over again to make crease down middle of pan long ways to create two "loaves". Remove plastic and place meatloaf uncovered in 325* convection oven for 45 minutes. Remove from oven and put desired amount of ketchup on top of meatloaf. Place back in oven for 15 minutes. Remove and cut cross way 15 cuts to make 30 servings per pan.

Note: If you don't have a 60 qt. mixer, you can divide in thirds and use a 20 qt mixer. If you don't have a mixer, make sure you wear propper gloves and mix by hand.
