Macaroni and Cheese with Cheddar for 240 people

30# elbo macaroni
25# shredded cheddar cheese (medium or sharp)
2 lbs melted butter
1 1/2 gallons milk
2 tbsp salt
2 tbsp pepper


In large kettle or two kettles, place macaroni in boiling water, stir frequently to keep from sticking. boil for about 8 minutes. Remove from heat and strain macaroni. Divide macaroni evenly in full sized deep hotel pans lightly sprayed with non stick spray. Add evenly milk, butter salt and pepper and cheese, saving out enough cheese to cover tops of macaroni pans. Mix well in each pan, place remainder of cheese over top then place in 325* convection oven for about 30 minutes uncovered. Remove from oven and serve.

Note: Goes well with fresh watermelon, veggy sticks with dip, salads and a nice warm roll with butter.
