Quick Easy Hawaiian Chicken Brochettes, a Festive Recipe with Fresh Pineapple, Vegetables and Chicken Breast, Great Brochettes for the Barbaque Grill or in the oven. It's a Hawaiian Luau.

Hawaiian Chicken Brochettes

1 lb chicken breast, boneless, skinless, partially cooked
1 green or colored pepper, cut in 2" squares
1 onion, large cut in 2" pieces
1 lb. whole large mushrooms cut in 1/2
1 pint cherry tomatoes
1 fresh pineapple, cut in 2" peices
1 pint sweet and sour sauce
1 can crushed pineapple, or pureed fresh pineapple
2 tbsp olive oil
10 skewers, metal or bamboo


Combine crushed pineapple and sweet and sour sauce together, set aside. Impale ingredients onto skewers as you desire, place on cookie sheet. Lightly sprinkle olive oil over, then sweet and sour /pineapple sauce over brochettes and they are ready to cook. Place brochettes in 400* pre-heated oven for about 15-20 minutes or until lightly brown edges appear. Or, Fire up the barbeque grill and place brochettes on and turn periodiccally until desired doneness is reached. Serve with wild rice and vegetable or salad. Any type of bread can be served with this also. This recipe is great for Hawaiian Parties.
