Tuna Tomato Lotus Quick and Easy
serves 4 4 red ripe tomatoes 8 oz. tuna, drained 1/4 c onion, diced 1 green pepper, cut in long strips from top to bottom 1/8 c celery, diced 2 tbsp mayo salt and pepper
to taste
In mixing bowl combine tuna, onion, celery, mayo, and spices, set aside. Take tomatoes and core out middle.
Star tomato by cutting 6-8 slices 3/4 of the way through. Put tomato in individual bowls and spread apart enough
to fill with tuna mixture. Take green pepper strips and place in star pattern on top of tuna. Makes a healthy lunch.
This quick and easy tuna tomato lotus recipe can be served with any soup.
