Happy St. Patrick's Day Roasted Corned Beef
Recipe is Quick and Easy with a spicy mustard and honey seasoning. Roasted Corned Beef is a great Fall recipe and goes
well with red potatoes and cabbage.
Roasted Corned Beef (with Honey Mustard Optional)
serves 10-14 3-5 lb corned beef brisket (raw, usually contains season packet) 1 c dijon mustard 1/4 c honey 1 tsp garlic, granulated or fresh chopped (in jars at your grocers) 1/8 tsp white pepper 1/2
c apple juice
Using a roaster, pour in apple juice. Then put in the corned beef brisket. In small mixing
bowl mix honey and dijon together, then spread on brisket. Add garlic and white pepper on top. Bake covered 300* for 2-3
hours or until tender. You may uncover and put under broiler for about 5 min. or until glazed brown.
Note: when doing any roasts, patience is the magic wand. I like doing roasts
on days when I'm home with little to do(except play in the kitchen).
Some serving ideas for corned beef are roasted
cabbage and carrots, saurkraut, red potatoes, squash. Any of these can be roasted with the corned beef with the right size
roaster.

Mango Sweet and Sour Chicken Arbutus
Quick and Easy Recipes to Prepare with Fresh Mangos, and any Red Sweet and Sour Sauce. Fresh Chicken
Breasts are baked with our Mango Sweet and Sour Sauce for Chicken Arbutus. This is Named after one of our Best Places in Michigan
to be, and for the Special People that Reside There.
Mango Sweet and Sour Chicken Arbutus serves 5
7 boneless skinless chicken breasts 2 mangos, peeled, chopped fine chunks in
processor 4 oz. oriental sweet and sour sauce (red) grocer 2 oz. melted butter
Lay chicken breasts
on Sprayed non stick baking sheet. Lightly brush with butter, and place in 400* pre-heated oven for 15 minutes. Remove and
cut chicken ( it won't be fully cooked yet) in 2-3 slices per breast and place back on baking sheet. Mix mango with
sweet and sour sauce and pour liberally over chicken breasts. Several options to choose from when finishing chicken:
* Place back in oven top rack of oven for 20 more minutes.
* Under the broiler until lightly brown and
chicken is fully cooked.
* On the barbeque grill.
Note: Serve with any rice or pasta and a nice
green salad.

Quick Easy Hot Wings Make a Great Appetizer, Hot Wings For Any Party or Get Together. Quick and
Easy to Prepare for Birthdays and Holidays Too.
Hot Wings
5# chicken wings
4 oz butter
1 1/2 c hot sauce (basic red pepper sauce)
Cut wings at joint, throw end tip away. Deep fry in 2-3 qt. shortening
at 350* for ten minutes. You may have to fry 4 batches.
Melt butter in sauce pan, add hot sauce and whisk together.
Place cooked wings in colander and place over bowl to catch access sauce. Pour hot sauce mixture over wings then place
in baking dish. May place in 225* oven to keep warm. Pour unused hot sauce back in sauce pan to repeat process. Serve
with ranch or bleu cheese dressing. A Superbowl treat!
Note: If you are making a double or
triple batch, bake the wings first on a sheet pan at 350* for 40 minutes to dramaticaly reduce frying time

Here's the chili recipe for those of you cooking for a crowd:
56# chili beans(red) ( 7 no. 10 cans)
11qts tomato juice
30# ground beef
6 large green peppers diced
4 large spanish onions diced
2 large stalks celery diced
1 c. ground cumin
1 c. chili powder (mild if
for kids)
1/4 c. granulated garlic
2 tbs white pepper.
Place ground beef in pan and cook in convection
oven 325* about 1 1/2 hour stirring around every 20 minutes. Place diced vegetables, juice, and spices in kettle and simmer
until cooked. Add beans then ground beef(cooked and drained). Let simmer and serve.
Serves 180 to 200 people, how easy
is that!
Goes great with corn bread or parmesan bread sticks and salad.

a hard time getting the onion smell off your hands? Try running your hands in cool water for a few seconds, then grasp the
neck of the faucet and slide you hands quickly back and forth on the chrome causing some friction. Rinse and Voila! No smell.
