Fried Pork Chops, Quick Easy Southern Recipe Using Egg, Milk, and Spices Then Rolled in Crushed Crackers and Fried. Fried Pork Chops for Supper Tonight! How Easy is That!

Fried Pork Chops, Quick Easy Southern Style!
6 pork chops
1 sleeve saltines, crushed
2 eggs
1/2 c milk
pepper to taste
1 1/2 c cooking oil

Put eggs and milk in a bowl and blend together. In seperate bowl put flour. In seperate bowl put crushed satltines. The process is taking a pork chop, dip in flour, then dip in egg, then dip in crackers. Then place in frying pan with hot oil on medium high heat. Fry on both sides until brown. Serve.

Note:  Use this same quick easy pork chop recipe process for chicken strips or fried chicken (may need to deep fry chicken 12 minutes). Serve with any side dish, salad and quick bread.

Chicken Almondine Flambe' is a Quick Easy Recipe that is Eligant and literally on Fire! Use Chicken, Madiera Wine, Fresh Mushrooms, Onions, and Almonds to Create Chicken Almondine Flambe'

Chicken Almondine Flambe'    serves 4
4 chicken breasts, cut in 1" cubes or strips
1 c. slice fresh mushrooms
1/2 onion diced
1/4 c. sliced almonds
3 oz. maitre d' butter
1 c. madiera wine
2 c. Flour
1 tsp. season salt
1/2 c. chopped fresh chives

Pre-heat oven to 400*. Place almonds on sheetpan and brown in oven for 2-4 minutes, or until lightly browned. Remove from oven and set aside.

In a large bowl, place flour and season salt and mix together. Take chicken and roll in flour. On stove using a large sautee pan, place butter and melt.  Once butter is melted take chicken chunks from flour and place in pan evenly. Put in mushrooms, onions, chives and almonds.  Let chicken brown in pan and turn with tongs so both sides are brown.  Once chicken is browned, vegetables should be cooked enough also. Turn up heat on stove and add 1/2 of the madiera wine and light with stick lighter. You will get a nice blue flame. When flame goes out add the rest of the wine and turn down stove to simmer for a few minutes. Serve over wild rice.

note: This is a good recipe to wow your friends with and it is quite easy to do. You may also sustitute frog legs for chicken in this recipe.

Here's the chili recipe for those of you cooking for a crowd:
56# chili beans(red) ( 7 no. 10 cans)
11qts tomato juice
30# ground beef
6 large green peppers diced
4 large spanish onions diced
2 large stalks celery diced
1 c. ground cumin
1 c. chili powder (mild if for kids)
1/4 c. granulated garlic
2 tbs white pepper.

Place ground beef in pan and cook in convection oven 325* about 1 1/2 hour stirring around every 20 minutes. Place diced vegetables, juice, and spices in kettle and simmer until cooked. Add beans then ground beef(cooked and drained). Let simmer and serve.
Serves 180 to 200 people, how easy is that!

Goes great with corn bread or parmesan bread sticks and salad.

Quick Easy Hot Wings Make a Great Appetizer, Hot Wings For Any Party or Get Together. Quick and Easy to Prepare for Birthdays and Holidays Too.

Hot Wings

5# chicken wings
4 oz butter
1 1/2 c hot sauce (basic red pepper sauce)

Cut wings at joint, throw end tip away. Deep fry in 2-3 qt. shortening at 350* for ten minutes. You may have to fry 4 batches.

Melt butter in sauce pan, add hot sauce and whisk together. Place cooked wings in colander and place over bowl to catch access sauce. Pour hot sauce mixture over wings then place in baking dish. May place in 225* oven to keep warm. Pour unused hot sauce back in sauce pan to repeat process. Serve with ranch or bleu cheese dressing. A Superbowl treat!

Note: If you are making a double or triple batch, bake the wings first on a sheet pan at 350* for 40 minutes to dramaticaly reduce frying time

Here's a tip from Chef Frank:

 Having a hard time getting the onion smell off your hands? Try running your hands in cool water for a few seconds, then grasp the neck of the faucet and slide you hands quickly back and forth on the chrome causing some friction. Rinse and Voila! No smell.
