Drawn butter, or some call it clarified butter, is used over broiled fish, lobster, and many
different seafood entrees whether on the grill or under a broiler.

butter in small sauce pan very slowly. do not stir or boil. Whan butter has melted, skim away salt layer on top. Than ladle
the clear hot butter into a small "drawn butter cup", or a small custard dish does well.
