Chicken Almondine Flambe' is a Quick Easy Recipe that is Elegant and literally on Fire!
Use Chicken, Madeira Wine, Fresh Mushrooms, Onions, and Almonds to Create Chicken Almondine Flambe'
Chicken Almondine Flambe' serves
4 chicken breasts, cut in 1" cubes or strips
1 c. slice
1/2 onion diced
1/4 c. sliced almonds
3 oz. maitre d' butter
1 c. madeira wine
2 c. Flour
1 tsp. season salt
1/2 c. chopped fresh chives
Pre-heat oven to 400*.
Place almonds on sheetpan and brown in oven for 2-4 minutes, or until lightly browned. Remove from oven and set aside.
In a large bowl, place flour and season salt and mix together. Take chicken and roll in flour. On stove using a large
sautee pan, place butter and melt. Once butter is melted take chicken chunks from flour and place in pan evenly. Put
in mushrooms, onions, chives and almonds. Let chicken brown in pan and turn with tongs so both sides are brown. Once
chicken is browned, vegetables should be cooked enough also. Turn up heat on stove and add 1/2 of the madeira wine and light
with stick lighter. You will get a nice blue flame. When flame goes out add the rest of the wine and turn down stove to simmer
for a few minutes. Serve over wild rice.
note: This is a good recipe to wow your friends with and it is quite easy
to do. You may also sustitute frog legs for chicken in this recipe.
