Cream of Broccoli
serves about 8-102 bunches broccoli, chopped
1/2 onion, diced
2 ribs celery, fine chopped
1 large carrot,
5-8 cups milk
1/8 tsp white pepper
1 tsp vegetable base
2 cups water
1 c shredded
In large kettle, place water, carrots, onion, celery, vegetable base, and white pepper. Boil
for about 20 minutes. Add broccoli. Boil for only a few minutes. add milk and stir continuously, watching heat. As milk heats
up add roux and whisk until desired thickness is achieved. Serve with Shredded cheese or add cheese last to soup.
Note: A great Vegetarian meal or serve with sandwiches or an appetizer before a meal.
