Quick and Easy Stuffed Acorn Squash for the Fall and Holiday Season. Use Fresh Acorn Squash in Season, it's Easily Stuffed and Satisfying.

Stuffed Acorn Squash
2 acorn squash cut in 1/2  (from top to bottom) remove seeds
2 lbs ground pork sausage
2 tart apples, peeled, diced small
1 c chopped walnuts
1/2 onion small diced
2 ribs celery small diced
1 tbsp rubbed sage
2 tbsp maple syrup (imitation is fine)
2 eggs
1 tbsp brown sugar

In large mixing bowl place all ingredients (except squash), and mix well. Once mixed, pack ingredients into acorn squash and and allow it to mound a little over the top like a ball. place stuffed squash on sheet pan or baking dish and place in pre-heated oven at 350*. Bake for 45 min. to 1 hour. Remove and serve.

This is a wonderful entree and is perfect for the fall season and for Holidays. Can be served with any
salad or fresh cut up fruit.
