Chili Con Carne (with beef)


2 lbs ground beef
2 cans chili beans
1 onion, chopped
1 green pepper, chopped or diced
2 ribs celery, chopped
2 tsp garlic, chopped or granulated
2 tbsp ground
cumin
1 tbsp chili powder
2 qts tomato juice
4-6 oz. refried beans(canned are fine)
1/4 tsp white pepper

 In large sautee pan, brown the ground beef and vegetables. Drain off fat. In large pot place all ingredients except refried beans( these are for thickening lastly). Slowly bring to a boil, stirring often. Let simmer for 1 1/2 hour, stir often. After chili is fully cooked you may want to add rerfried beans to thicken, its optional. Serve with crackers and shredded cheese if you please.

Note:
You can substitute chicken for beef, and even use different beans like lima, white, brown etc. If you want vegetarian just omit beef. Serve with any side Salad, and Quick Bread.
